Preparing sourdough is an essential tradition of human history and the oldest sourdough breads ever excavated in an archeological side was from 3700 BCE in Switzerland – but it is thought to be several thousand years older.
The slightly sour taste comes from the fermentation of the dough – and especially for the sourdough it is very important to use clear and fresh natural water, with no additions like in many piped drinking water supplied in most urban areas. For our sourdough bread we only use the clear German spring water and we bake it in a wood fired oven – tradition and values from the past, combined with the highest standards and professional service from today.
